Chicken Cacciatora

2 T extra virgin olive oil
2 1/2 pounds chicken
1 jar (26 oz) pasta sauce, any flavor
1/2 lb fresh mushrooms, sliced
2 T drained capers
salt and freshly ground pepper

Heat oil in large skillet over medium heat.  Add chicken; brown on both sides.  Drain excess drippings.  Add pasta sauce, mushrooms and capers.  Season with salt and pepper.  Reduce heat to low, cover and simmer about 45 minutes, or until chicken is tender.

Makes 4 to 6 servings.
