Grilled Corn on the Cob

1-2 T Extra Virgin Olive Oil
4 ears fresh corn, husks and silks removed
salt and pepper

Preheat grill.  Place each ear of corn on a piece of aluminum foil large enough to cover the corn completely.  Using a pastry brush, liberally spread olive oil over each ear, and sprinkle with salt and pepper to taste.  Wrap each ear tightly.  Grill corn for at least 10 to 15 minutes (we prefer cooking it for 20-25 minutes, by which time many of the kernels have browned), turning each ear three times so that each of the four "sides" of the corn will face the grill for an equal amount of time. (Tip: for evenly grilled 10-minute corn, turn each ear 180 degrees after 3 minutes, 90 degrees after the next two minutes and 180 degrees after the next two minutes, and then remove corn after the final three minutes).  Allow to cool before serving.
