Polenta Pizza

3 cups cold water
3/4 cup polents
3/4 tsp salt
1 can (15 oz) low fat pizza sauce
3/4 cup grated Parmesan cheese

Bring water to a boil in large saucepan; add salt.  Gradually stir in polenta; cook, stirring frequently, about 25 minutes, or until thickened.  Spread in 9 inch glass pie plate.  Let stand 15 minutes.  Spread pizza sauce on top; sprinkle with grated cheese.  Bake at 350 degrees for about 15 minutes, or until sauce is bubbling and cheese has melted.  Cut into wedges.

Makes 4 to 6 servings.
