Quesadillas

4 tortillas
olive oil
1 cup creamed cottage cheese or 1 1/2 cups grated cheddar cheese
2 T cream
1 medium green pepper, diced
1 can sliced jalapenos, or 1/2 fresh jalapeno, sliced, to taste
1/2 cup salsa or taco sauce
sour cream (optional)

Soften the tortilla by heating briefly with a little olive oil in a pan.  Remove and drain on paper towels.  Mix the cheese, cream, peppers and jalapenos together and add a little salsa - not too much or the filling will be too sloppy.  Divide the filling equally and spread over each tortilla and fasten with a toothpick.  Lightly fry on both sides, being very careful when turning the Quesadillas over.  Serve with salsa and/or sour cream.
