Thai Style Risotto

2 cups Thai jasmine rice
1 T sliced garlic
1 T ground ginger
1 T chopped shallots (purple onions)
2 T Thai chile peppers, sliced
4 cups plus 2 T chicken stock

Place the stock and rice in a medium sized pan or in the rice cooker.  Stir fry the other ingredients.  Add the stir-fried ingredients and cook as normal.  When the cooking time is finished the dish is ready to serve.  If you wish you can add a pinch of saffron or turmeric powder to color the rice yellow.
