Tomato/Zucchini Sandwiches

1 T olive oil
1 cup onion, chopped
1 clove garlic, minced
1/2 large zucchini, thinly sliced
1 tomato, sliced
1 T Italian seasonings
ground pepper, to taste
4 slices of bread
2 T Nayonaise

Heat oil in small fry pan, add onions, cook until tender.  Add garlic and cook one minute.  Add zucchini, cook until almost tender, add tomatoes and cook another 2-3 minutes, until tomatoes are done.  As tomatoes are cooking, you may want to toast your bread.  Add Italian seasonings and ground pepper to tomatoes/zucchini mixture.  Spread Nayonaise on bread or toast, spoon on tomato/zucchini mixture.

Serves 2.
