Wild Dandelion Salad

1 large bunch dandelions
extra virgin olive oil
salt/pepper
2 cloves garlic, chopped
wine vinegar

Wash dandelions thoroughly and drain.  Cut into bit sized pieces.  Combine 3 parts olive oil to 1 part vinegar, garlic, salt and pepper.  Shake well, pour over dandelions and toss.  

Serve with crusty bread.
